Chile-Cheese Frittata

  • 2 packages Maruchan Ramen Beef Flavor
  • 1–17 oz. can whole kernel corn, drained
  • 1–4 oz. can diced green chilies
  • 1/4 tspn. red pepper flakes
  • 3 green onions, sliced
  • 2 tomatoes, chopped
  • 1 cup shredded cheddar cheese
  • 3 eggs
  • 1 1/2 cups milk
  • 8 olives, sliced

Cook noodles in 4 cups boiling water, reserving seasoning packet. Drain. Place in bottom of greased 2-quart baking dish. Sprinkle seasoning over. Layer corn, chilies, green onions, red pepper, tomatoes and cheese over noodles. Beat eggs with milk.  Pour over Ramen mixture. Top with olives. Bake at 350˚ for 30 minutes until browned.
