Pancetta and Mussels Ramen
- 2 packages of Maruchan GOLD Spicy Miso Flavor Ramen
- 4 oz pancetta, diced
- 12 mussels
- 1/4 cup white onion, diced
- 1/2 cup white wine
- 1 tbsp garlic, diced
- 1/2 fresh squeezed lemon
- 2 tbsp butter, unsalted
- 2 tbsp green onions
- None Green jalapeño slices, to garnish
- None Lemon wedges, to garnish
- None Toasted baguette, as needed
Cook Pancetta and Mussels
Over medium heat, render pancetta until crispy. Add mussels, white onion and garlic, cooking until fragrant and onions are soft. Deglaze pan with white wine and fresh lemon. Lower heat and reduce by half. Turn off heat, add in butter, stirring in the pan to create a sauce.
Boil 4 cups of water in a medium pot and cook 2 packages of Maruchan GOLD Spicy Miso Flavor Ramen for 3 minutes. Allow noodles to soften slightly, and then gently spread them apart.
Prepare Soup Base
Place the contents of the soup base in each serving bowl, add noodle water and stir.
Divide and Serve
Divide ramen noodles in soup bowls and top with pancetta and mussels. Garnish with green onions, jalapeño slices and lemon. Serve with toasted baguette on the side. Enjoy!
