  • 2 packages of Maruchan Chicken Flavor Ramen
  • 2 cups shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 3 tsp ginger, minced
  • 3 cups water
  • 1 tsp salt
  • 3/4 cup pumpkin purée
  • 1/4 cup cilantro, to garnish
  • 2 tsp Sriracha
  • 15 oz light coconut milk
  • 1 tbsp oil
  • 10 oz chicken, cut into strips

Cook Ingredients

Heat oil in a pan over medium heat. Add garlic, onion and ginger. Cook for 5 minutes. Add mushrooms and cook for an additional 3 minutes.

Add Broth Ingredients

Add water, coconut milk and seasoning packets and stir. Then add pumpkin puree, Sriracha, chicken and salt. Simmer until the chicken is fully cooked, about 10 minutes.

Add Noodles

Add Maruchan Chicken Flavor Ramen noodles and cook for 3 minutes.

Divide and Serve

Divide soup into bowls and garnish with cilantro. Enjoy!
