  • 1 tbsp oil
  • 1 onion, sliced
  • 3 tsp ginger, minced
  • 2 cloves garlic, minced
  • 2 cups shiitake mushrooms, sliced
  • 1 tsp salt
  • 3 cups water
  • 15 oz light coconut milk
  • 3/4 cup pumpkin purée
  • 2 tsp Sriracha
  • 10 oz chicken, cut into strips
  • 3 packages of Maruchan Chicken Flavor Ramen
  • 1/4 cup cilantro

Heat Oil

Heat oil in a pan over medium heat. Add onion, ginger, and garlic. Cook for 5 minutes.

Add Mushrooms

Add mushrooms and cook for 3 minutes.

Add Remaining Ingredients

Add coconut milk, water, seasoning packets, pumpkin, Sriracha, and chicken. Simmer until chicken is fully cooked.

Add Noodles

Add Maruchan Ramen Chicken Flavor noodles and cook for 3 minutes.

Divide & Serve

Divide soup into bowls and top with cilantro.
