Add toasted sesame oil and Sriracha to pot and bring to a simmer. Add onion and tomato and cook for 4 minutes. Add ginger, garlic and Maruchan Beef Ramen packets.
Add a cup of water and purée mixture in a food processor until smooth. Return to pot. Add soy sauce and beef broth. Simmer for 10 minutes.
Sauté beef in hot oil until cooked. Season with salt and pepper.
Add eggs to boiling pot of water. Cook for 7 minutes. Remove eggs from pot and run under cold water for 1 minute. Remove shell and cut in half.
Add ramen noodles to sauce and cook for 3 minutes. Add scallions.
Divide into bowls. Add steak and eggs. Top with cilantro and sesame seeds.
