Stir-Fried Kimchi Ramen With Tofu

  • 3 packages of Maruchan Soy Sauce Flavor Ramen
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp Asian chili paste
  • 1/2 tbsp vegetable oil
  • 1 lb extra firm tofu, pressed for at least 20 minutes and cut into 1-2 inch cubes
  • 2 cups kimchi, sliced into thin strips
  • 1/4 cup chopped peanuts
  • 2 scallions, sliced

Create Sauce

Whisk soy sauce, vinegar and chili paste together in a small bowl.

Cook Tofu

Heat 1/2 tablespoon oil in skillet on medium-high heat. Add tofu and cook until browned, about 5 minutes on each side.

Stir-Fry Kimchi

Stir-fry 2 cups kimchi for 1 minute.

Cook Noodles

Boil the Maruchan Soy Sauce Ramen noodles for 3 minutes. Remove from heat and add flavor packets. Drain the noodles and divide into serving bowls.

Combine & Stir-Fry

Add ramen noodles, tofu and soy sauce mixture to skillet. Stir-fry together for about 3-4 minutes.

Top & Serve

Divide onto plates or bowls and top with peanuts and scallions.
