- 2 packages of Maruchan GOLD Spicy Miso Flavor Ramen
- 1 tbsp hot water
- 1 oz lemon juice
- 2 tbsp tahini
- 2 tsp ginger, minced
- 1 tbsp honey
- 1 cup purple cabbage, chopped
- 2 tbsp fresh parsley, chopped
- 2 tbsp scallion, sliced
- 2 tbsp carrot, shredded
- 1 cup cucumber, sliced
- Lemon wedges, to garnish
- Sesame seeds, to garnish
Instructions
Gather Ingredients
Prepare Noodles
Boil 4 cups of water in a medium pot and cook 2 packages of Maruchan GOLD Spicy Miso Flavor Ramen for 3 minutes. Allow noodles to soften slightly, then gently spread them apart. Strain under cold water, then chill in an ice bath until cold.
Prepare Dressing
In a small bowl, combine the contents of the soup base packet with hot water, lemon juice, tahini, ginger and honey. Whisk together.
Mix Ingredients
Combine noodles, cabbage, parsley, scallions, carrot and cucumber in a mixing bowl. Toss with the dressing.

Divide the noodles into 2 bowls, then top with lemon wedges and sesame seeds. Enjoy!
