Stir-Fried Kimchi Ramen With Tofu

Shake up your ramen with stir-fried goodness! Pan-fried tofu adds some delicious plant-based protein while spicy kimchi adds an extra kick.

- 1/4 cup soy sauce
- 2 packages of Maruchan Soy Sauce Flavor Ramen
- 1 lb extra-firm tofu, pressed and cut into 1-2 inch cubes
- 2 tbsp rice vinegar
- 1 tbsp Asian chili paste
- 1/2 tbsp vegetable oil
- 1/4 cup chopped peanuts
- 2 scallions, sliced
- 2 cups kimchi, sliced into thin strips
Instructions
Create Sauce
Whisk soy sauce, vinegar and chili paste together in a small bowl.
Prepare Noodles
Cook Maruchan Ramen Soy Sauce Flavor Ramen in 4 cups boiling water for 3 minutes, stirring occasionally, then turn off the heat. Add the contents of the seasoning packet and stir well for 1 minute until seasoning is fully dissolved. Drain noodles.
Cook Tofu and Kimchi
Heat 1/2 tablespoon oil in a skillet on medium-high heat. Add tofu and cook until browned, about 5 minutes on each side. Remove the tofu from the pan and set aside, then stir-fry 2 cups of kimchi for 1 minute.
Combine & Stir-Fry
Add ramen noodles, soy sauce mixture and tofu to the skillet. Stir-fry for 3 minutes.
Divide and Serve
Divide noodles and top with peanuts and scallions. Enjoy!
